Ogni cultura ha luci e ombre. Ma le noti soltanto se puoi fare il confronto con altre culture. Allora vorrei mostrarvi un’ombra della nostra cultura, che invece nella cultura africana e’ sostituita da una luce meravigliosa di solidarieta’.
Pensiamo a come mangiamo noi. Abbiamo le nostre posate e i nostri piatti puliti, le salviette, i tovaglioli. Il nostro tavolo di cucina. E prendiamo dal piatto di portata o dalla pentola la nostra porzione, tanto ce n’e’ sempre abbastanza per tutti. O ci compriamo qualcosa al chiosco, al supermercato, al panificio e lo mangiamo per la via camminando, guidando...
Qui non mi e’ capitato praticamente mai di vedere la gente camminare e bere o camminare e mangiare. Forse perche’ bevono molta poca acqua (da generazioni il loro corpo e’ abituato alla carenza di liquidi), e hanno poco da mangiare? O forse perche’ quando mangiano, danno un valore a quel momento della giornata, e si fermano. Magari si siedono per terra o su un gradino, e assaporano i bocconi di cibo. (Foto in allegato)
Al Lar e al centro mangio insieme agli educatori e ai bambini. E quando arrivo non sono mai la prima a cominciare a mangiare. C’e’ chi mangia con il cucchiaio e chi con la mano destra. Per questo ci si munisce di un bicchiere di plastica pieno di acqua: per prima cosa «rilavano» la mano con cui mangiano. E il resto di acqua si beve durante il pasto o si usa per lavarsi la mano alla fine e per sciacquare il piatto dai resti.
Quando tutti i bambini sono seduti, si canta una canzone di buon appetito e poi si puo’ cominciare a mangiare. Chi assaggia e non aspetta gli altri si prende una sgridata. La stessa cosa per chi esce dal refettorio con il cibo in mano. Non si fa, e’ maleducazione. (pero’ i bambini adorano farlo, camminare per la stradad e ostentare che hanno un panino tutto loro).
Mentre passo vicino ai tavoli dei commensali, chi ha gia’ il piatto davanti e sta mangiando mi dice “servido, Mana”. Che significa “ho del cibo sul piatto, come mi servo io puoi servirti anche tu, condividiamo”. La risposta e’ ovviamente “no grazie”, perche’ la cuoca ha preparato un piatto per tutti, anche per me. Allora prendo il mio piatto, mi siedo e dico “buon appetito”.
Alla persona che arriva a mangiare dopo di me, dico anche io “servido”, e quella persona ringrazia e prende il proprio piatto. Un pro forma, direte voi. Si, per noi che al Lar abbiamo tutti un piatto pieno e’ vero.
L’altro giorno Mano Sargento si era portato una polenta di manioca, perche’ non gli piace la pasta e voleva mangiare qualcosa di piu’ buono. Gente, sono italiana, ma anche a me la pasta qui fa passare la fame. E si che io mangio tutto (Silvia, tu lo sai...). Ma la pasta tutta rotta e stracotta, la prima volta ok, la seconda mmm, la terza volta nella stessa settimana... mi sono chiesta perche’ non ero andata a casa a mangiare da sola. Poi mi sono detta “la compagnia di queste persone vale questo polpettone di pasta”.
Tornando a Sargento. Si siede a tavola, spiega che non gli piace la pasta, apre il tupperware con la polenta dentro, e dice “servido”. Mi propone di assaggiare, sono l’ospite dopotutto, quindi a me l’onore di iniziare, e gli dico “no grazie sto gia mangiando la mia pasta con pollo”. Ma gli altri al tavolo degli insegnanti accettano, e si servono. Penso che sia considerata una cosa molto buona. O forse e’ semplicemente una cosa diversa dal menu settimanale del Lar ;). Fatto sta che Sargento aveva portato piu’ di una porzione e ha condiviso con gli altri la sua leccornia.
E io europea mi chiedo quanto spesso prima di dare un morso alla mia brioche, o mangiare il mio pacchetto di cracker, chiedo a chi mi sta di fronte se ha voglia di assaggiare. Garantisco che a volte lo evito di proposito. Perche’ ho fame (ma si chiama davvero fame la mia, in paragone a loro?), o perche’ quello che ho preso mi piace molto e non mi interessa condividerlo.
Stefan una volta mi ha detto che “a mangiare da soli si ingrassa”, per dire che quando mangiamo insieme agli altri e’ tutta un’altra cosa, la condivisione da’ un sapore speciale al cibo, tanto che mangiamo meno ma ce lo gustiamo di piu’. Ecco qui non sempre c’e’ abbastanza per tutti, ma non e’ concepito di non condividere. Dove mangia uno possono mangiare molti. Si mangia dallo stesso piatto, si rompe il panino in vari bocconi, o si spezza il biscotto, la canna da zucchero, si morde dallo stesso frutto. A chi ti chiede di assaggiare puoi dire di no, ma e’ un segno di grande maleducazione, e anche il bambino piu’ dispettoso qui finisce per cedere e dividere e condividere.
E quante volte a casa o in mensa ci sediamo e cominciamo a mangiare prima che il resto della famiglia o il resto del gruppo sia arrivato a sedersi? “eh ma si raffredda, e’ un peccato”. A volte e’ vero, a volte stiamo semplicemente comportandoci da egoisti ;)
E per chiudere in gloria questa email sulla cultura del cibo, vi riporto cosa ho imparato oggi dai bambini: la ricetta di come cucinare la pasta. Si, perche’ oggi al centro ricreativo ognuno portava una ricetta che sapeva cucinare da solo, e la presentava con tanto di consegna e condivisione del risultato. In allegato vedete il risultato del tupperware party.
Prendi il carbone e lo metti sul focolare (e gia’ qui vi ho spiazzato, perche’ sfido tutti ad avere un focolare per cucinare con il carbone). Poi lavi la pentola e la metti sul fuoco. Ci fai bollire l’acqua, metti pasta cipolla, sugo di pomodoro olio (che qui di solito e’ di arachide, visto che le producono) e sale. Non chiedetermi in che ordine, a seconda del bambino c’erano variazioni sul tema. Ora il segreto mozambicano: quando l’acqua e’ evaporata tutta... la pasta e’ pronta!!! Sara’ per questo che la pasta mi sembra sempre scotta? Ma guardiamo l’aspetto positivo: cosi’ non servono 2 pentole e soprattutto non si spreca acqua ;)
Buon appetito, a voi che state mangiando pasta di grano duro, cotta al dente, e magari condita con olio extravergine di oliva...

Every culture has appreciable aspects as well as criticable ones, lights and shadows. And you can only notice them if you get to know other cultures. I would like to point to a shadow of our culture, that is a brightness in the African culture. So bright, above all if we consider how they live.
Let’s think how we eat. We have our silverware, our napkins, our clean pottery. Our kitchen table. And we take our portion of food from the pot without worries, because there’s always enough for everybody. Sometimes we buy a snack from the kiosk, or at the supermarket, at the bakery, and we eat while walking or driving.
Here I never managed to see someone walking and at the same time drinking or eating. Maybe because they drink very little quantities (since generations they’ve been used to the lack of water), and they don’t have much to eat? Or maybe because when they eat, that is an important moment and they want to cherish and enjoy it. You see them sitting on the ground and eating with their hand or with a spoon. (Picture attached)
At the Lar I eat with the employees and the kids. When I enter the area where we eat, I am never the first one. There are some who like to eat with the spoon. Other ones eat with their right hand. Because of this you need the plastic cup filled with water: first thing you wash again that hand. The rest of the water will be used for drinking and at the end of the meal to wash your hand and rinse the plate from the grease.
Only once all the kids are sitting, they can sing a song to wish a good meal and start eating. No one is allowed to start eating before. If you do it, you get told off. Same with leaving with food in your hand. No go. (But kids love to leave with their bread, to show off on the street that they have their own bread).
So when you enter and walk by, those who already have a plate say “servido, Mana” (=served). Which basically means “my plate is here, I am serving myself but you are welcome to serve yourself as well, let’s share”. The answer is of course “no thank you”, because the chef prepared for each of us a portion. Then I take my plate and I sit down and say “enjoy your meal”.
To the person who comes after me, I also say “servido”, and he/she thanks and take his/her own plate. A formality, this “servido”, you might argue. Yes, because at the Lar we have a portion each.
On Tuesday Mano Sargento took to the table a Tupperware with polenta made with manioca, explaining he doesn’t like pasta and therefore brought something else. I tell you, I am Italian and I don’t consider myself as picky person , but I must admit, after 2 weeks I can’t take this pasta anymore. The first time is ok, the second time you swallow it, the third time in the same week you think “why did I say I’d eat here with them, instead of going home for lunch?”. The answer is clear: eating in company is priceless, no matter how good a cook I am ;)
So, back to Sargento. He opened the Tupperware and said “servido”. He offers me to try first (I am the guest after all), and I say “no thank you, I am eating pasta with chicken”. The other ones at the table of the teachers accept and take a bit. Apparently it’s quite tasty. Anyways, it’s something different from the weekly menu of the Lar, which repeats itself week after week and year after year. Sargento brought more than just his portion and shared with the other teachers.
And I am an European, how often do I get a gipfeli, a snack and first of all offer to share it? I tell you, sometimes I avoid to offer it on purpose. Because I am hungry (is that hunger, what I feel? Compared to what happens here… I have doubts), or because I like it a lot and I don’t “need” to share it.
Stefan once told me “if you eat alone you get fat”, to mean that when we eat together with other people, we enjoy our time, share the food and eat less in the end, simply because it ends up being tastier. Here in Africa it’s often the case that there is not enough food for everybody, but it’s a no-go to avoid sharing. Where one eats, more than one can eat. They eat from the same plate, they break with their hands a bread roll, or a cookie, or a sugar cane, they bite from the same fruit. If someone asks you to try, you can say no, but you are being so impolite that even the nastiest kid will give up and share.
And how often we sit down at home, or in the canteen and start eating before the other ones of the family or the group join? “it gets cold otherwise”, yes, sometimes it’s true, but sometimes we are simply being selfish ;)
And to close this email about food culture, I share with you what I learned today from the kids: the recipe of how to cook pasta. Yes, because today the kids were supposed to bring to the afterschool center a recipe they could prepare on their own, present it including showing the result in a Tupperware. At the end sharing of the content with the rest of the class. In attachment you see the result of the Tupperware party.
So, the recipe. Go get coal and put it in the fire place (ah, I want to see how many of you can repeat the recipe 1 to 1, now!!! I am mean, I know). Then you wash the pot and put it on the fire. Fill with water and get it boiling. Then add cut onion, tomato paste, oil (here usually peanut oil, since they produce peanuts in the area) pasta and salt. Don’t ask me in which order you put the ingredients, each kid made a different description. Now, the real Mozambican trick: when the water evaporated completely… pasta is ready to be served!!! Can it be because of this, that I never manage to eat it al dente? Oh well, let’s look at the positive aspect: you only need one pot instead of 2, and you save water.
Enjoy your meal, over there, where you can buy your favorite brand of pasta, cook it al dente, and maybe pick up a fancy virgin olive oil for the sauce…

Centro "Jovens de Esperança"

Este año 2015 inauguramos el centro "Jovens de Esperança":

Los Jovens de Esperança empezaron a moverse en el año 2013 con la casa- residencia femenina de niñas adolescentes con el fin de que continúen sus estudios y así evitar matrimonios y embarazos precoces. Este año, Maissa y Muatassia están en la casa y colaboran remuneradamente realizando un trabajo de apoyo a educadores en el centro Recreativo Okhaviherana.

En 2013 también se iniciaron encuentros semanales, los sábados, con los adolescentes a partir de 16 años, alumnos del Lar da Esperança, centro Recreativo y centro Talita Kum, con el fin de que tuvieran un espacio de reflexión propio de jóvenes.
Al final del año pasado, y viendo el potencial del grupo Jovens de Esperança y a la vez tan amenazado por las problemáticas de adolescencia en Pemba (alcoholismo, embarazos, desistencia escolar,etc) creímos que era el momento para dar un paso más…

Así, este año 2015 se inauguró el centro Jovens de Esperança con más de 40 matriculados/as, físicamente localizado en las instalaciones del centro ya conocido como Talita Kum (barrio de la Expansão).
Los jóvenes tienen dos turnos, de 7h-11h y de 13h-17h, al que asisten dependiendo del turno de su escuela. En ese tiempo realizan actividades de refuerzo escolar, formación humana, manualidades y artes y formación profesional con Carpintería, Informática y Corte y Costura.

Estos/as Jovens de Esperança tienen en común el haber crecido estando en otro de los centros de la fundación y actualmente estar estudiando la educación secundaria (a partir de 8ª clase).

Es bonito ver a 40 adolescentes que se juntan para seguir creciendo sonriendo a la esperanza. Y empezar a ver los frutos de esas semillitas que hace años crecían y hoy, ya grandes, se ve el gran potencial y el futuro en sus manos, un futuro lleno de esperanza, esa esperanza que necesita Mozambique.

Dia 1 de Junho: Dia da Criança

Hoy celebramos el “Dia da Criança”, y fue un día mágico…

Hoy sonreímos a la vida por todas estas semillitas de esperanza. Semillas que van creciendo con la esperanza de crear ese otro mundo posible con el que soñamos cada día.

Todos los niños y niñas del Lar da Esperança, del Centro Recreativo “Okhaviherana” y del centro Casa Azul de Mahate fueron invitados a una fiesta celebrada en la escuela secundaria de Pemba.Cerca 500 peques bailaron, comieron y disfrutaron de la fiesta. Volvieron todos cansaditos, pero contentos. Un día de fiesta, un día diferente, un día cargadito de alegría.

Y en el centro Talita Kum, unas 60 niñas se divirtieron con una gymkana organizada por el grupo Jovens de Esperança. Más de 30 adolescentes prepararon una tarde llena de actividades: carreras de sacos, relevos, teatros, cantos, danzas y un largo etcétera que hizo que el aire se cargara de sonrisas.

Sí, ha sido un día mágico…

Agua para Semillas

La ciudad de Pemba, en la provincia de Cabo Delgado (Mozambique) está viviendo uno de los peores momentos por la escasez de agua. Además, en las últimas semanas, ha aparecido un brote de cólera. Una enfermedad para la que la higiene y la hidratación son fundamentales. La Fundación Semillas de Esperanza se ha visto obligada a cesar la actividad en sus centros y necesita vuestra ayuda para recaudar fondos con los que construir un depósito de agua para poder suministrar a todos sus centros y recuperar su actividad.

Praia de Chuiba

O espetáculo dos domingos em Chuiba…


Tudo começa de manhã quando o carro chega ao Lar da Esperança. Entre gritos e sorrisos as crianças subem no carro e cantando vamos nos aproximando na praia de Chuiba... Um paraiso mesmo!

Em questão de minutos todos desaparecem do carro e começa a magia:

  • Assane e Feliciano chegam a correr no mar e tras um bom mergulho nadam e nadam longe...
  • Carmone, Jose, Saide e Luciano amostram como já conseguem nadar, como peixes entram e saem da agua, orgulhosos dos seus avanços...
  • Bernardo salta e se faz cair com as ondas...
  • Vania, María e Bendita muito cuidadosas jogam onde tem pouca agua, saltam, se deitam, riem...
  • Zaida, Uassia e Dulce brincam na areia a fazer bolos e cantar o “parabens”...
  • Carlos, Pedro e Afai apanham um pau de coqueiro que chamam de barco, e navegam...
  • Ermelinda, Flora, Suate e Nito brincam na agua saltando e fazendo comboios, lutam na agua, correm...
  • Natalia e Amissina siguem aos grandes e entram nas suas brincadeiras...
  • Utassia, Margarida, Namoja, Laurinda e o resto de meninas grandes passeiam a beira do mar procurando pequenas conchas e carangueijos que no Lar cozinharão e partilharão com o resto...
  • Abdul e Luis Omar cuidam do carro e das roupas na areia, entre tanto descansam...


Esses dias podes só sentar e observar o espetáculo, respirar profundo e encher-te de tanta energia positiva que dança no ar.


É um conjunto da paissagem, dos olhares, do sol, dos movimentos, das cores, de sentimentos...

Quem já ficou connosco em Chuiba sabe do que falo...
